What "chorizo" means here.

In South America, chorizo means sausage — the format, not the flavor. It's a link in natural casing you grill whole, not a crumbled filling you fry out of a tube. That's what lets us put real cheddar and jalapeño inside one and still call it a chorizo.

The one people tell their friends about.

Real dried jalapeño and real cheddar folded into premium pork, with paprika, cayenne and chili powder. The cheese softens as it heats and the jalapeño hits at the end — creamy, juicy, and just hot enough.

Fully cooked — just heat and sear

Our chorizos are fully cooked, so you're not cooking them through — you're bringing them to temperature and getting color on them.

  • Grill — Medium heat, 5–7 minutes, turning, until hot and lightly charred.
  • Skillet or griddle — Medium heat, about 5 minutes, turning occasionally.
  • Air fryer — 350°F for 6–8 minutes.

Heat to 140°F. Let them rest a minute before serving.

How to eat it: make the choripán at home

Split a crusty roll, grill the chorizo, butterfly it, and spoon cilantro chimichurri over the top. Five minutes, and it's the same sandwich people line up for at our farmers market stand.

We only serve the choripán in person — come find us at the market on weekends.

Cured the traditional way

Real chorizo is cured. We use curing salt the way it has always been done — it's what gives our chorizo its color, its depth and its safety. That's why we don't claim to be preservative-free: we'd rather tell you exactly what's in the pack.

What we don't use: fillers or MSG.

Ingredients

Pork, pasteurized processed cheddar cheese (pasteurized milk, cheese cultures, salt, enzymes, milkfat, sodium phosphate, salt, sorbic acid, annatto coloring and powdered cellulose), paprika spice, natural flavor and garlic, dried jalapeño, spices, garlic, paprika, cayenne pepper, chili powder, onion, sodium nitrite.

Contains milk.

Storage & shipping

Keep refrigerated at 40°F or below for up to 7 days. Freeze at 32°F or below for up to 3 months. Thaw in the refrigerator. Do not refreeze.
